BEEF POT ROAST
SERVES 4-6
PREPARATION & INGREDIENTS
2 lb boneless chuck roast
2 lb medium sized red potatoes, cubed
1 yellow onion, sliced
1/2 lb cherry tomatoes or 1 medium sized tomato, halved or sliced
1/2 lb mushrooms, sliced
1/2 lb baby carrots or 2 carrots sliced 1/4" thick
1 green bell pepper, sliced
Spices: salt, pepper, garlic cloves, red pepper flakes, oregano, Worcestershire sauce
1/2 cup coca cola
6 tbsp olive oil
1 cup water + 32 oz vegetable stock
