1 lb any kind of potato with skin, cubed
1/2 yellow onion, sliced
1/2 cup milk or cream
1/2 cup shredded mozzerella
Seasonings: salt, pepper, garlic powder

Boil cubed potatoes until tender
2.
Drain most of the water, leave approximately 1/2 cup in pot
3.
Use this water to cook down the onion
4.
Once onion is tender, begin to mash potatoes in pot with onion
5.
Most water should be absorbed at this point. If not, drain it
6.
Add milk, cheese and seasonings
7.
Stir and mash until desired consistency, and it's ready to serve
